I'm so pleased we bought this Wusthof knife. I did a lot of research beforehand and, knowing that I didn't want the Japanese-style Santoku knives, I am delighted that we chose these. It was a bit scary though as these are the first 'proper' knives (over £40 each, that is) that we've bought. We also bought the Wusthof Classic Ikon Knife set (9601) plus the Boden Bistro Universal Knife Block and these 4 knives fit perfectly in it at a slight angle.I also bought the Knife Sharpener by Lantana...and I've yet to use it (2 months later)...I know, I know, I'm meant to keep finely sharpening these but I'm just so happy with them as they are...I'm just waiting to see how long it takes before I notice alack of sharpness ;)I highly recommend these knives. They are beautifully balanced and fit well in the hand (male and female).Just be aware that they take some getting used to if you've not used 'the best' knives before...my fingers are now healed but it's true that they were pretty cut to shreds in the first week. Surprisingly sharp! But please don't let that put you off...just take your time and don't buy them the week before a major party that you're doing the catering for...you need time to become familiar with these!

A choice of kitchen knife is a personal thing, and depends on what you do in the kitchen as well as the size of your hands and how much you care about the quality of your tools. This is a very sharp knife and glides through veg and fruit and most things I would chop with minimal effort and great precision. I like a slightly heavier knife as I feel it gives control. It will slice very finely. For me it is about the right size for everyday tasks, though someone with larger hands might prefer an 8” knife. It is not hard to sharpen with the proper tools, and in my experience so far has kept its edge well, with regular touch-ups. Also it is important to wash it by hand and to dry it and store it without clashing with other knives.Your best tools are worth maintaining well. This is a great and faithful tool if it suits you and if you take care of it.I don’t do much meat cooking so can’t comment on that extensively (my choice on that front for carving and cutting is a serrated butcher’s knife). But this knife does a decent job on most fish in a pinch - I suspect It would do on anything without bones.

Bought this knife in France for our holiday home after having originally bought (and thrown away) a cheap set from Homebase . It is brilliant - so brilliant that I keep it in our safe in France when we are not there so no-one using the house can lose it/damage it!Family friends were staying with us this week and commented on what a great knife it is and were going off to buy when they got home. It is easy to sharpen - two of three swipes through a pull through type sharpener every few days and it goes through veg, meat etc like a knife through the proverbial. It feels very comfortable and is a joy to hold and use.You can tell I am enthusiastic as this is the first (and probably only)time I will write a review for a product on any web site.PS - buy the 16cm version. The compact size is part of what makes it great.

I bought this knife elsewhere but am at Amazon to get the same knife for my neighbour.I love this knife so much that when we moved 3,000 miles I left my furniture behind but packed my good knives, both Wusthof Classic Ikon--the 6-inch cook's knife and the paring knife. Mine came with the sharpener, which is dead easy to use. Not that the knives need sharpening all that often.I find I cut myself MUCH less often with a good, sharp knife than when a dull one slips. No surprises with this knife. It cuts cleanly and evenly, slides through tomatoes and is strong enough for turnip. I got the 6-inch blade because my hands are small. This knife is so well balanced, fits my hand perfectly.I'm off to order one for my neighbour.I simply cannot stand watching that poor woman struggle with the lousy knife she now has.

In regards to the previous review, i can understand why you found these knives hard to sharpen if you are not a professional chef, as they are designed to keep a good edge for a long time. In order to do this, they are made of a hard metal and it takes a lot of practice to be able to put a good edge on a knife.I have tried many different knives over my 17 years in the restaurant business and i find these the most comfortable to use for long periods of time and to keep a good edge for the longest and hence would recommend them to all professional chefs. I used global knives for a long time but found after prolonged use they gave me quite bad calluses on my hands.I hope this review is helpful.

I cook the lunch (often soup) & evening meal. My sharpening steel had worn flat and the handle of my 16 cm knife was breaking up. I purchased the Wursthof Sharpening Steel and Wursthof 16 cm ClassicCook’s knife as replacements. I have used the 12 cm Wursthof 12 cm Utility knife for years. I sharpen the knives using the recommended method of light slicing strokes at an angle of 20 degrees. It’s like polishing the cutting edge. The 16 cm is the sharpest knife I have ever used. It makes meal preparation effortless. The combination of the Wursthof steel, 12 cm & 16 cm knives is excellent for the “House Chef”!

Just to confirm what the previous reviewer wrote, the knife that I was supplied (in Dec 2020) was indeed the latest incarnation of this classic chef's knife (with a black logo and less text on the blade). Currently, the product photo in the listing shows the older style (with a red square that carries the Wusthof logo).Anyway, I simply gave the knife 5 stars because although it's the first knife of this quality level that I have ever bought, it is exactly as I imagined its would be to hold and use. Expensive, but 'the best' generally is.

Arm hair shaving sharp out of the box, comfortable and very well made. It's so well balanced that I sometimes forget it's there.I've had this knife for a couple of weeks now and have been very impressed by it; dicing, slicing and chopping are all handled with ease and so far it hasn't lost its edge at all. I don't doubt that this knife will outlast me.I love the half bolster, but it may not be to everyone's taste, particularly if your not used to using razor sharp kitchen knives or if your technique isn't so good.

Beautifully designed and made. Very, very sharp knife. It is also really quite heavy, and the weight combined with the size and the razor-sharp blade meant that I have to be extra careful so now it actually takes me longer to do all the cutting and chopping. I ended up with wrist pain too, but I will persevere. I would say this knife will definitely not suit those with small / delicate hands and wrists. And don't even think about it, if you suffer with arthritis.

Purchased as a gift for my partner who is extremely happy with it.Perfectly weighted, well designed and impeccably sharp - after almost 3 weeks of use the edge is still as sharp as when it arrived. As a kitchen knife its certainly on the expensive side but its worth spending more on a quality blade so you don't end up having to sharpen your knives every week just to keep a keen edge.

This is a very comfortable knife to use. The curve of the blade makes chopping feel a breeze. It is exceptionally sharp. Also, the 6 inch is the perfect size for cutting up most foods.Update after owning for 2 years - sharpens excellently and it is still my favourite knife. No obvious signs of wear yet. A great investment.

Excellent quality of knife with great comfort and sharpness. Had been a bit confused due to come with new logo, had to research about that and got the authentic confirmation about new simplified logo. Saller should update there photos with new one to get rid of making confusion.

Fed up with your delicate global knives ? Sure they are good for fine work, but if you want a strong heavy workhorse then you can't go wrong with a German wusthoff. Every bit as sharp as the globals, but thicker and stronger ... Good for fast chopping and dicing

I got this after buying another Wusthof. I am a convert. I have a couple of Kyocera ceramic, which look really cool, but they have to be babied. The Wusthof's are workhorses. You can use them all day, and still comfortable in the hand. Well worth the money.

I did a lot of research before. Bought this. So good I came back and bought the serrated bread knife too.Cannot recommend highly enough - premium quality and the blade holds its edge for ages.
