As a novice cook, I recently purchased this knife having spent considerable time considering the alternatives. I eventually decided to go for this knife on the strength of its reviews - particularly having seen many reviewers comparing this extremely cheap knife with their top-end (£200+) chef's knives. I was not disappointed.This knife is head and shoulders above any I have used before. I didn't realise how effortless chopping food could actually be. The knife glides through onions and potatoes with zero resistance and - although I have relatively little skill with a knife - I am instantly able to chop and slice much finer, much quicker and much more comfortably than before.The Fibrox handle looks dull and cheap in images but is actually a very good quality, comfortable composite that is light but very solid.From reading the reviews, it seems that there is actually a variety of slightly different knives that are sold under this listing from different sellers (some with the cheaper, non-Fibrox "classic" handles). The knife in the image is the acclaimed 5.2063.20 (40520), which is the model that I received so - if you want the knife that's advertised - try and get it from the same seller I did (Nisbet's).Highly impressed.

Well what can I say! My wife spends her evenings hoping and praying that I wont use this knife, she is terrified that I will accidentally cut off one of my arms or slice through the kitchen worktop. She has vowed to me that she will not go anywhere near this thing as long as she lives. It was so sharp on arrival that the postman was shaking with fear as he was convinced it was going to make its way out of the more-than-substantial packaging and, as he put it 'go for him'. The first thing I did when I opened it was the usual sensible manly test and check the edge for sharpness with my thumb. All I can say is that I now have to unlock my phone with my finger as the thumbprint that was once so unique to me is no more,it has been shaved clean off and now resembles the pattern on a worn rubber glove. When tested in the more usual fashion on regular household groceries like tomatoes it performs exceptionally. It is a little ungainly to use when coupled with the chain-mail glove on my other hand, but I have no complaints on the performance of the knife itself. I enjoyed using it so much I made a special trip out to get more groceries, just to allow me the pleasure of using this new deadly household utensil. What a buy.

I am someone who really appreciates well-made tools that aren't flashy but do the job they're designed for flawlessly. This knife definitely falls into that category! The blade feels balanced and looks to be of great quality, and preparing food with it has been a joy so far. All the reviews I've read rave about the value for money this knife represents, and I have to say they're right. Victorinox is a venerable brand and unlike some others who continue to trade on past glories whilst putting out an inferior product, it seems this Swiss manufacturer still lives up to their reputation. Some people might not like the Fibrox (a kind of mineral fibre) handle, but I feel like it is more practical than a wood one if anything,and it feels reassuringly grippy in your palm - no accidental slips! I reckon you'd have to spend at least 4 or 5 times the money to get a knife that was objectively 'better' and even then, with most flashy knives you're paying for the way it looks or the hand crafted nature. This knife is perfect for me and I wouldn't hesitate to recommend it to other cooking enthusiasts, or even professionals looking for a bargain! I'm now considering picking up other knives in Victorinox's Fibrox range.

Great knife, if you never had a good knife, and only used parring knives all your life, I recommend you this knife, it even inspired me to start loving cooking again, such a nice feeling to use it every time.P.S. don't forget to hone your knife with sharpening steel before use, takes 5 seconds, but it will keep it sharp for much longer before you will need to use stone to resharpen your knife (depends on your use you might need to resharpen knife may be only 1-2 times a YEAR), so honing is a must for any knife to keep your knife sharp and you happy. The difference between expensive knives and cheap ones (speaking about knives for 3-10 pounds) is for how long they will stay sharp,every knife can cut paper like on youtube videos, but not all of them will last and be able to cut well after you used it every day for half a year to cut your sandwich in half, metal wears on all of them, this knife lasted me more than half a year already, I've been only honing it and don't see it requiring resharpening with a wet-stone any time soon. Just get this knife, it's Victorinox, they are known for their quality, easy as that.

For those wondering, this knife is model number 5.2063.20, in case you wanted to look around the web for professional reviews and the like. It is exactly the same as the old 40520 model, which was rated "Best Overall" by Cooks Illustrated in the US and is the top-rated item on the whole of the Amazon US site at the time of writing, so head over there if you want hundreds of other reviews and a more extensive product description.Personally, I think this is a fantastic knife, and for this money it is simply a must-buy. I've been using my flatmate's Globals for the past two years, but having moved house I needed to get my own set of knives. This knife compares very well to the 20cm Global chef's knife.It is very, very sharp and very comfortable in the hand. The handle is very sturdy and solid, and has a very easy to grip texture even when wet. It also feels very well balanced and was heavier than I expected; both very good things. If you are looking for a knife in the sub-£100 range I'd say get one of these and spend the rest of the hundred on a couple of other Victorinoxes. You won't be disappointed.

Discovered Victorinox knifes reading a gushing review from America's Test Kitchen, who tested dozens of chef knifes priced from dirt cheap to extortionate. They re-reviewed it repeatedly and it always came out on top. So I bought two about 10 years ago, together with other matching knives and a block. I can honestly say that every other chef knife I've used since has been crap by comparison. These last, they've got a beautifully thin profile that makes cutting a breeze, keep their sharpness for a reasonable amount of time, and they're easy to re-sharpen. Yes the handle is plastic - intentionally because the plastic used here is durable and easy to sanitise,that's one of the reasons for the NSF logo because it's rated for use in a restaurant. At this price, why wouldn't you get one? Oh and if you're so inclined, you can find these with red handles, so you can have a separate meat knife and veg knife.

Don't let the 'plastic' handle put you off! Granted, it's not a rosewood handle or something more expensive, but it feels really good in the hand, it won't slip (when wood sometimes can) and the blade itself is made by the Swiss Army knife people so you can be assured of its quality. I actually didn't know that kitchen knives came this sharp...I was able to cut thin wisps of paper and split them into shreds with no effort, straight out of the package. Cutting vegetables with this is as effortless as putting a butter knife through warm butter. It's an incredibly sharp chef's knife and will undoubtedly make you very happy (and efficient) if you spend any amount of time in the kitchen preparing food.I'm absolutely delighted that I bought this, along with the Victorinox bread knife, another winner, and will be recommending this brand to all my family and friends.

Compared to my old ikea365+ 6-inch knife, it is a bit more heavier and thicker. But it is so well-balanced. Thus, the extra weight doesn’t feel uncomfortable but actually helps the cutting feeling.The factory set sharpness is good but compared to my ikea knife which I sharpened regularly, the feeling of impedance from onion was somewhat duller. I believe the reason is the different angle of the blade. It is 18deg for this product and 15 deg for normal Japanese knives.So I believe after it’s sharpened it will perform even greater. I’ll update if that worked in this review.I said it felt “dull” but that doesn’t mean it is not sharp. Better expression must be “smooth”.It is sharp and I worry if my sharpening skill sucks so I lose this sharpness and have same sharpness that I had with ikea one.

Got this after watching a youtube video review of it on 'America's Test Kitchen'. What can I say? It's okay, it's not as wonderfully all singing and dancing as the review states, but it is okay as work-horse all round kitchen knife.It doesn't hold it's edge as well as I had hoped, we (my partner) are not heavy handed with our knives and we are careful about how they are stored, cleaned and used. I use a steel on the knife regularly and have to use a stone on it every 3-4 weeks. This is pretty much par for knives in this price range in our kitchen. The handle is good to grip with wet/damp hands, but overall I find the knife just a little bit light for my personal tastes.Would I buy it again?Probably if I didn't find anything else that is 'stand out good', before needing a new knife.

I dropped my lovely sabatier chefs knife and it smashed in two. Didnt feel like spending that much money, plus wanted something i could safely put in the dishwasher.a chef friend recommended vittorinox as a good sturdy beginners knife. this was a good price. handle is fine to use, the deep blade has pros/cons but i am overall happy with the knife. the edge is perhaps not as razor sharp as some, but it cuts just about everything easily (struggles with squashes and sweet potato). Its a pleasure to use and keeps its sharpness well. Doesnt suffer from being in the dishwasher.Overall i am satisfied with this knife and would definitely buy it again. Its not as nice as my sabatier,but is much cheaper and i think better value.

Very sharp. While cutting, my thumb was, as you'd expect, near the lower edge of the blade where the handle joins it, and one slight touch of the thumb on the rear portion of blade sliced me nicely and produced blood that made one of my kids go odd.Probably my fault, not the knife's, but be careful in that area of it.I love its sharpness and ease of use, and it washes in the dishwasher with no ill effects. Be aware that a broad blade can be useful for most tasks but if you're slicing potatoes, for instance, the spud slices will adhere to the wide surface area of the blade and cling all over it.I really like this knife for the great majority of chef's tasks. Good quality knife that is decently sharp for the price. This knife has drastically improved the speed and fun of preparing food, being able to dice and chop much faster and more accurately than our previous knife.If coming from a old, unloved knife that has dulled over the years, be sure to take some time to get to grips with how it handles, as it does require a different style to blunt knives.The only let down is the handle, but only in the sense that it feels and looks like the kind of handle you would have on knives from Poundland. In terms of handling and grip it copes very well.Finally, if you don't have one, be sure to purchase a sharpening steel to keep up maintenance on this.

I initially bought this as a quick replacement for my last chef knife of 10 years that I broke the tip off. Although this knife doesn't look that nice, the blade steel is excellent. I find the handle very comfortable for long use and the 8" blade is just about perfect for my knife style. I went for the broad blade as I like to pinch the blade with thumb and forefinger when slicing and mincing.I was a bit worried about the overall weight of the knife at first, quite a lot lighter than my last knife, but the balance is really nice and I soon got used to it. I have decided to keep this as my main everything knife and not to replace it. The quality is far better than I was expecting.

I bought this knife primarily for cutting up chickens, which it handles with ease. It outshines my cheapo chef's knife from college so much that I've been using it for all of my slicing and dicing until I can get the 8-inch version. The six-inch blade is a bit small for some tasks, so it's better as a compliment to a larger knife rather than a replacement. It's a great knife to have around when a chef's knife is too big for the job. You really have to work to get the knife to slip out of your hand; the Fibrox is an amazing material. Also note that the blade is angled somewhat from the handle, which keeps your fingers from hitting the cutting board when you're slicing.

Forget those stupidly expensive knives that cost a month's wages, and another month's wages to pay to get professionally resharpened. This is the knife that real working chefs use daily. Tough enough for swede yet light and flexible enough for delicate salad work.Kept properly honed, this will practically fall through even a soft tomato under its own weight like it was thin air.Perfectly balanced and has easily the best handle I've ever used - comfortable, indestructible and non-slip even with greasy hands.I've seen examples of these that were decades old working like new in commercial kitchens.An absolute masterpiece.
