The 10cm Inox stainless steel blade is suitably thin for fine paring and chopping, but sturdy enough to survive busy kitchen use. The Opinel's paring knife is wrought from high quality carbon steel which promises long life providing the blade is dried after each washing and lightly oiled to maintain its longevity without corrosion. Do not leave the knife to dry in the dish drainer lest over time corrosion sets in.Keep it sharp using a diamond file. Love your Opinel and it will provide you years of good use.The Opinel's tang goes through the wood handle approximately 2/3rds and is well riveted. The wooden handle sits comfortably in the hand and I'm well pleased.

Several years ago we purchased some serrated knives from our local kitchen store, the brand was L'Econome. They had the colored wood handle - these are essentially the same knives in appearance. These knives are similar but not quite as amazing - these have micro-serrations and don't glide through things like apples quite like the old L'Econome knives. These are totally fine in a dishwasher - though I'd expect the wood to break down after several years (our old L'Econome knives lasted about 12 years before the rivets/wood gave up).

I first bought one of these knifes while vacating in France as I needed something to cut some cheese and bread. That was 17 years ago - when I got home I used it daily and it remained extremely sharp until the wooden handle completely wore out. I was delighted to be able to replace it with exactly the same knife - it's light and sharp - can cut through anything with ease. Hoping this new one will last me another 17 years.

My wife loves this knife. Superb everyday cooks knife for many tasks. We misplaced the last one that was sharpened by a master Japanese sharpener that took all our french knives from this brand beyond the normal. The steel holds its edge and the feel is agile.

Other than the inordinately long time it took to arrive this knife has been a blessing to my kitchen, the handle is warm and easy to grip, the blade holds an edge better than the sabatier's that I have.Cant recommend highly enough.

This is a really superb small knife for scraping potatoes, and all those small veg chores that need a good, comfy sharp knife that is easy to hold and manipulate. The tops. I'm so glad for Amazon and its range and reviews!

Beautiful colour, lovely to hold and superbly sharp (so sharp I have been using the cover of another knife for protection). I am delighted with this knife and would happily recommend it.

These are great little knives and it's nice to have it in blue. Since I bought it my dog has unearthed the (same brand) knife it replaced so now I have two (one with chewed handle!)

this is the second opinal paring knife in 25 years, my wife uses this knife in the kitchen because it is carbon steel it keeps a very sharp edge great product.

Perfect size and shape for preparing vegetables. Lightweight, sharp and ergonomically well-designed. I may have a buy a few more in case I ever lose this one!
