I own more than one set of Opinel carbon steel knives (including these) and am saddened (but not really shocked) that people have no clue how carbon steel reacts or how to care for it.I'll start of with just how good these knives are, they'll take an edge brilliantly and will be everything you need for a small knife in the Kitchen.I'll end with an educational section...Carbon steel is NOT stainless, it WILL stain. If you wash it and do not dry it it WILL rust. The staining is called patina and is actually quite prized in carbon steel pocket knives, it creates an oxidisation layer and this layer actually provides a barrier to help prevent damage later (although this will not help with rust if left wet.)This patina accumulates faster or slower depending on what you're cutting (acidic fruit is usually quickest to patina this is why people that didn't like the patina before stainless steel was prevalent had silver fruit knives)All in all these are really good knives you just need to know what you're buying and how to care for it.

Bought to replace another Opinel paring knife I accidentally snapped the tip off.Blade is a little longer than most other paring knives in the kitchen but makes short work of slicing soft veggies.Edges are sharp but came with a pretty heavy burr so needed to clean that off with a honing steel before using.Interms of how reactive the carbon steel is - 10 mins while doing other bits in the kitchen and the blade started oxiding in spots. Now the patina is fairly dark and it isn't anywhere near as precious as it was fresh out the box. I'd definitely recommend getting that bit out the way so you can use the knife without worrying so much.Only loses points for the handle.Not quite to my liking but that might change as I use it more.Get these over the stainless steel ones if you want tools with a bit of character.

These are not stainless steel but carbon steel knivesPeople who left bad reviews for this knife are ignorant of the fact that they expected a carbon steel knife not to rust if you leave it wet.These are incredibly good knives, simple but good. Extremely easy to keep them sharp. That is the reason why I love them. Forget the bells and whistles knives, they cost a fortune and you will be afraid to use them since you don't want to damage your precious knife. Carbon steel is the best choice if you actually want to use your knife regularly. You only need a cheap sharpening stone or steel to keep these razor sharp. To sum it up Damascus steel is for show, Carbon steel is for the pro. Enjoy.

To all those righting bad reviews for these knives they don’t understand that they are a carbon steel not stainless like most cheap kitchenware. The carbon steel or the best steel as it’s very hard and will hold a good edge... can be sharpened to a very sharp edge. However the steel after washing ad drying should also be oiled in order to prevent oxidation. For 14 quid your getting a very high quality blade.

These knives are absolutely fantastic. Really high quality carbon steel holds a razor sharp edge. Perfect for pareing, peeling and other fine tasks in the kitchen. Once you've cleaned them by hand, just lightly oil the blades and soon they will develop a protective patina. These knives will last for years if you aren't stupid. Like most of the people complaining about rust.

Small, sharp, and useful little knives. One of these and a big cooks knife is all you need in the kitchen, I think. They look attractive too, and you can pretend you "picked them up in France" :)They aren't stainless steel, so keep them dry and oil occasionally or they'll rust, of course.

These knives are simply the sharpest and best knives I have ever bought. They are so useful to peel veg and fruit or to slice very precisely deli food like "saucisson sec". Highly recommended.
