I had a favorite knife that was over thirty years old that was given to my husband by his mother when he went off to college, an all-stainless steel 6-inch utility knife made in Japan, and I also needed to replace a 7-inch utility knife made by Henckel that was 30 years old, both had incurves from use and probably my newbie sharpening methods using a honing stone. They have since gone to thrift store.The Arcos stood out in length, shape and price to replace these two knives. I've had this knife for over two weeks now and it is my go-to knife for slicing up fixings to go on sandwiches: slices onion very thin, easily removes the membrane from peppers and cuts cheese quickly and thinly.It slices and easily cuts away the rind of oranges with little waste. I would think this knife would fillet fish pretty good too due to its shape and thinness. I tried chopping garlic cloves with it and it does a great job as long as you keep the garlic under the flat side of the cutting edge and not towards the tip where it bends slightly upwards. My Santoku 8 inch knife is quicker to use for chopping garlic as it has a full length flat blade.Any new knife one has to get used to, and I'm already getting used to the feel of the handle and weight of this knife. The weight is light, which is what I wanted. The back spline is thin, which is what I wanted. It has a full tang, which is what I wanted. It's always been comfortable in the hand from the first time I used it. The plus is it looks handsome and has a cool stylized letter A on the bottom of the handle. I haven't needed to sharpen it yet. Very sharp. I was surpised to find it was made in Spain as I didn't know there were any knife manufacturers in that country. They did a very good job on the design and materials of this knife, and glad I didn't have to give my money to China. It arrived fast from Amazon and came in a plastic display box like you would see at a department store. I am keeping it in good shape by washing and drying soon afer each use. Thanks Arcos for a really good knife. I'd give it five stars but that is only is for an item that lasts a long time and I've only had this knife for a few weeks.
