The Ailsa Bay distillery forms part of William Grant & Sons' Girvan distillery in south Ayrshire, Scotland, and was officially opened ten years ago. This Ailsa Bay Sweet Smoke Single Malt Scotch Whisky is described as the future of whisky and is distilled scientifically with quantified elements of “peat & sweet” plus a micro maturation process afterwards. The spirit spends it's first six to nine months in Hudson Baby bourbon casks before being transferred into virgin American oak casks to complete the maturation process – no timescale is mentioned for this but as the distillery is fairly new there is no great age to this particular Scotch.Ailsa Bay Sweet Smoke is described as a “modern whisky for the inquisitive” and like most varieties of Scotch it will have it's advocates with others being less keen – despite all the hype I enjoyed it quite a lot. I tried it neat and with water and with ice – neat was a bit too intense as this whisky is strong at 48.9% alcohol-by-volume, with Highland Spring water developed the taste and the nose, and some ice chilled it nicely for summer drinking. There are notes on the whisky's flavour on this Amazon product page – but I always find it difficult to describe what is a rather subjective experience. Ailsa Bay Sweet Smoke is presented in a simple modern-looking 70cl bottle with no gift box, and features a label something like a lab-report! Currently around fifty-five pounds from Amazon this is a premium price for a non-aged whisky – however, the strength and unique production method go some way to justifying the price and this is whisky that lovers of Single Malts will want to try for themselves. For the young and trendy there are some cocktail recipes by Matt Whiley of London's Scout Bar on this product page – and this is a whisky that I am sure will appeal to those new to whisky as well as to the more experienced spirit drinkers looking to try something a bit different. For the novelty factor and original concept I rate this Ailsa Bay Sweet Smoke Single Malt Scotch Whisky with five stars – but only for a certain demographic and certainly try to taste it before purchasing a bottle at this price.

I'm really impressed with this funky modern take on malt whisky. Let's face it, single malts have a particular tried and tested formula in terms of marketing/branding and approach. There's been other "new" whiskies that have tried to apply to a more modern theme but they have tended to be bourbons/blends/whatever that weird David Beckham stuff is (why is David Beckham trying to sell me whisky!).This Ailsa Bay whisky has real pedrigree by the looks of where and how it has been produced and the story around its production is really unique and interesting. I'll let you read for yourself but the scientific angle is fascinating and something that, along with the simple modern design of the bottle,makes this whisky stand out.Taste-wise it's really lovely. Very strong, smokey yet not overpowering. I tend to take mine with ice so it always tempers the strength but having tried it neat and even with ice that has sat for a while you get a stronger and sharper intense taste than other more run of the mill whiskies I have in my drinks cabinet.It arrived without the typical cardboard presentation box but I would still see this as a great gift for a younger (age appropriate) whisky fan.....perhaps a nice present for a special birthday for a family friend?

I was asked if I’d like to review the Ailsa Bay Sweet Smoke Single Malt Scotch Whisky, 70 cl, and I said yes.The Ailsa Bay is an award winning Single Malt Scotch Whisky.It’s a peated single malt Scotch whisky which comes from the world's most technologically advanced distilleries by William Grant & Sons.It’s the first whisky to be measured by sweetness (SPPM), peatiness (PPPM) and undergo the revolutionary process of micro maturation.I‘m not a huge whiskey drinker, usually just during the Winter months when it’s colder. I’ll drink it in coffee after a cold Winters day walk with the dogs, during the festive season with mixers or ice,and when I’ve got areally bad cold or have the dreaded flu then I’ll drink it straight.The strength of this whiskey is 48.9% vol. I’ve only had a tiny drink of this on it’s own. Blimy, (I could use stronger words but I’ll leave that to your imagination), this is one whiskey that went straight to my head with it being so strong. This will definitely have to be used with mixers or coffee.If you love a strong whiskey drink then this is the one for you.

I can't profess to be a connoisseur of whiskey, but I do enjoy a nice malt now and then. Ailsa bay is the bay in Ayrshire, Scotland.Ailsa bay distillery is a modern distillery who claim to the be future of Whiskey production, high claim indeed.The taste is unique, and far better than the cheaper supermarket Whiskey. You can really taste the nodes of Vanilla, the smoothness of peatiness also brings the flavour together nicely.The bottle is somewhat surprising, as it looks and feels more like a wine bottle than an embossed angular Whiskey bottle, that is it almost looks out of place on our drinking cabinet. However, I think the bottle says a lot about this modern distillery,suggesting that Ailsa bay is intent on doing things their own and establishing a uniqueness all of its own, so fair play.Bottle and presentation aside, it is flavour that is important, and this Whiskey stands out, albeit in my very narrow view of Whiskey tasting and expertise.

Bought a bottle of this at Gatwick as it was not one id seen before and sounded up my street. Im not a whiskey expert i tend to favour speysides and generally enjoy sweet\smoke\vanilla etc. and thought why not. Well this whiskey made every night on the veranda afore bed a dream, incredibly smooth with so many delicious and strong almost thick flavours ive yet to find anything in the price range close. Raved about it to my wife who hates whiskey with a passion and made her try a nip and got a "oh my god thats really nice" which is probably the best recommendation i can give. By far my favourite, ive found others with some great flavours but nothing anything close to the smoothness.

I have wanted to try this for a couple of years as was really interested to know what a "micro distilled" malt would be like. Sadly this isn't the one with the bit of Ailsa Craig granite in the lid but it's still a nice bottle. The whisky itself has a nice flavour considering it being so young, not too harsh. We found it oddly thick, almost oily, and you could see the legs on the glass more than any other whisky we have. I do think it's a tad overpriced for what it is but I definitely have no regrets in buying it, I know we will enjoy this bottle and am keen to see what this distillery will come out with next.

My palate isn't very refined so I didn't get any of the 'smouldering heather', 'vanilla oak' or the 'creamy toffee' tastes coming through (and I'm a bit disappointed that I missed out on that last one, to be honest) but I did register the smokiness and it's very nice. Goes down far too easily and is one of the smoothest Scotch's I've tried. On paper it reads like a science experiment but during our vigourous taste tests we agree it's actually more like alchemy. Definitely one we'd recommend.

One of the more interesting malts I've tried, I found the sweetness combined with the smokey taste very pleasant.Rather good - I had it with ice - probably not recommended but I like cold drinks - and it is rather good. Not so sure its a fifty pound a bottle though - but one I'll saver over the coming winter months.It does look lovely in the drinks cabinet though, and a couple of visitors have all ready made a bee line for it to see what it is so they have the design/marketing spot on.

An excellent whiskey, managing to be peaty but sweet enough to avoid intense bitterness, with vanilla and toffee notes but a strong, smoke flavour. Strong but with depth and complexity, adding interest to each sip.Ailsa Bay chose to redesign and rerelease their single malt, analysing a number of data points to engineer a new flavour, an homage noted in the scientific branding making the bottle stand out amongst the usual stags and mountainsides.A fine addition to any collection.

This whisky actually comes from the Grants stable and it has a lovely blend of smoke and peat, with some with almond and honey thrown in for good measure and it is certainly a very good measure. Well balanced, with a lovely sweetness to it, almost like sweets. Add some water and you'll find the very smooth flavours come through nicely. It is a young malt, with a fantastic pallet. Very good value for money and suggest you get a few bottles.

I tried this at a friends house as well as a few other brands; this one I really liked and some I tried were very expensive. I did an on line search and ordered myself a bottle from Amazon; came well packaged and fast delivery. Being whisky it can be an acquired taste but this is so smooth, has a lovely flavor and does not make you shudder like some. I am definitely hooked; a little treat to myself.

I have only typically drank what I would call normal whisky and this is very different in just about every way (other than colour).My brother who is visiting and I have been sampling it and one used to the different smell the taste is not too bad and of course can be used with mixers.Would I buy another bottle? No, especially at the quite high price.

Wonderfully stylish and modern looking bottle which I will definitely be re-using for something.  I got strong notes of smokiness above anything else (as the label states) with undertones of oak, rubber and grapefruit with a slight medicinal edge.  A nasal whiskey rather than throaty.  Easy to drink and a very distinctive flavour

A lovely, smoky peaty welcome comes with the first sip of this welcome addition to this distillers range. Then a gentle, radioactive glow warms the body and soul. I am enjoying this whisky greatly. But drink with care, it packs a head spinning punch....

Excellent whisky mellow and sweet with just a hint of smoke. I’m not a lover of deeply peated or heavily smoked whiskies however I find this has a bit of everything but not over powering. Nice bottle as well.
