A one-piece, solid metal design, the 18cm Chopper is deceptively light and slim bladed. Compared to most of the large choppers on the market, it is the lack of weight which you first notice. Don't assume you'll have to press or chop harder when using it: its balance is really sweet - if you're used to a heavier knife, getting used to the weight can be a bit daunting at first, but persevere, you'll find the cutting is deceptively delicate, if a matter of confidence in the first couple of days.I'd never used a chopper before, had confined myself to the use of the traditional cook's knife. The chopper makes a valuable addition to your range. It slices vegetables beautifully,and you can quickly adapt your cutting style to chop with speed and safety. It's more effective and more adaptable that the cook's knife. But, of course, with anything as sharp as this, take your time and rehearse your technique while you get used to the weight and feel of the tool.From a safety viewpoint, even when wet, the handle is safe and non-slip. Because this is a single forging, there is no danger of the handle coming loose, or of dirt building up in the joints - cleaning is much easier ... but avoid dishwashers, they destroy edges! The handle is cold to the touch but rapidly warms and is very comfortable in use. It also feels slightly slimmer than, say, Sabatiers, so may suit smaller hands.Although a one piece, there is little danger of your hand slipping onto the blade edge - although the blade does not curl back towards the handle (Global use this design in their cook's knives) , the blade is so broad it would be difficult for your forefinger to slip onto the edge. If I do have one criticism, however, it is that the corner of the blade, facing towards the handle, is very sharp, and it is quite conceivable someone could cut themselves on it - though the risk must be tiny.The cutting edge, of course, is superb - tempered, hardened, stainless steel, compared in the adverts to a samurai sword blade. It keeps extraordinarily well. (Use a soft plastic chopping board, not a metal or glass one!) Global recommend that you use a water stone or ceramic whetstone for occasional re-sharpening - this buffs up the edge. Using a traditional steel can bruise the metal and actually make the edge more fragile. A stone polishes the edge down to an even sharpness.And I've taken advice and bought a magnetic strip to hang up my knives - if you are going to invest in a high quality blade, take care of it and don't chuck it in the kitchen drawer where its edge can get damaged. Of course, if you have young children in the house, make sure all knives are safely locked away. Used properly, this is a superb tool, but grabbed by curious young fingers, the edge could be unforgiving, and it must be a tempting shape for young hands to toy with.This is an extraordinarily beautiful tool. As a practical design, I am absolutely confident of its quality - I think it looks great, too, but that really is a matter of taste.

My first ever Chef knife and was a hand-me-down that was blunt. Must be 20 years old now and still going strong. Forget using steels as they knacker the edge. Use a coarse/fine combo whetstone and watch the Global sharpening guide video. Mine's still razor sharp but requires investment of time to keep it that way. Sure, the Shun and MAC range offer a better edge and harder steel (I have both for comparison) but, once you get the famous index finger callus, they become a part of you and I'll never part with mine. Has earned me a fair few pennies over the years and has earned it's place in my knife roll as a permanent fixture.Contrary to a couple of reviews, this IS a one piece knife.If it's got welds in it, it's either been dropped and bodged or is a fake! I've had this in a vice and given it some and it will not break and has been dropped a few times with nothing more than a tiny chip in the blade edge. Easily (well figuratively speaking) ground out!This particular knife is pretty versitle but would avoid starchy foods as it really needs flutes/scallops to overcome those.Try before you buy though in my opinion as you need to adjust chopping style to a "push" chop which doesn't suit all. You can sort of "rock" chop with it but it doesn't suit the style of blade.Again though, invest in a whetstone and some sharpening knowledge as it pays dividends.....

Brilliant knife which I prefer above all the others I own, including Henkels and Sabatiers. Light, razor sharp, slow to dull and incredibly easy and quick to sharpen using any old steel, strong enough to chop straight through an enormous swede, and beautifully balanced.Very versatile, despite the way it looks and its "vegetable knife" description - I've used it for everything, from jointing chicken to chopping radishes.(Incidentally, I know it's so good because I bought another one from a seller on E-bay, and it is clearly a fake. The fake looks identical but doesn't cut straight, and doesn't sharpen well.You realise how good the original is when it's directly compared to someone else's knock-off!)

They say your more likely to cut your fingers with a blunt knife. BUT when a knife is as sharp as this you have to still be carefull. Perfect for everyday tasks around the kitchen I keep mine sharp with an occasional polish on a global 5000 grit stone. I've got a G-5 and a GS-1 but it's the G-5 that gets the most usage.Note: i'm 6'4" with reasonably big hands and i find them both very comfortable to use [Although the G-5 does have a slightly bigger handle].

I haven't tried but I would not be surprised if you could shave with this knife; it is that sharp. Global knives are not cheap but I cannot believe you can buy a better knife at any price; try and please let me know if you can prove me wrong.

I now own 6 Global products and they are Japanese precision at it's best (made in china) :-)These knives hold an edge extremely well and when paired up with the Minosharp 440

For about 6 years I wished I could have GLOBAL kitchen knifes set, I am so glad I have got them know. Good sizes, light and sharp, easy to look after.
