It's a great frying pan at a fairly great price. I've previously owned non-stick pans and a cast iron pan. Regardless of not being a coated pan the De Buyer carbon steel pans can get a fairly good natural coating on use. This is not as great coating as a non-stick pan, but still decent. You can fry most things without or with very little grease after use but you will have to note that you may also lose your coating if you make very acidic (tomato or wine based) sauces with the pan. Some say iron based pans are a hassle to clean but I would disagree. You cannot use a dishwasher or any sort of washing liquid.However if you just boil some water on the pan after cooking and swipe of all the dirt and then let the pan dry on it's own heat you can get quite effortless cleanup.Best part of an iron pan such as this is that unlike non-stick pans they will last forever if you don't let them rust - which isn't hard. Carbon steel pans are quite nice compared to cast iron due to two qualities. Firstly this 28cm high-edged pan is considerably lighter than my slightly smaller cast iron pan. While it's not light compared to non-stick pans, it's not too heavy to be handled with one hand either. Secondly unlike cast iron pans a carbon steel pan heats up quicker and reacts to changes in temperature very fast. It is also worth noting that a carbon steel pan can reach quite high temperatures very easily unlike non-stick ones.Overall I'd recommend this product completely to anyone who is willing to put even a tiny bit of effort to cooking. An iron based pan needs more effort than a non-stick pan, but not much. For the effort you'll be rewarded with superior qualities and a pan that lasts for ever. It's actually a quite cheap pan considering you generally have to change non-stick pans every year or two.I'm definitely going to buy a second and smaller De Buyer pan at some point.

For me this should be classed as a kitchen essential. Absolutely delightful and amazingly versatile. Season it properly and look after it and it will reward you with years of quality service.

The shape is novel, the heating is fast, the operation is convenient, and the size is suitable. The food is delicious.
