Finally, the perfect frying pan. I have gone through so many non stick and ceramic frying pans. I have tried very old inherited cast iron, and more recent Lodge cast iron. The old cast iron is distorted, the Lodge is ok but has quite a rough surface and it is, of course, very heavy. This pan is highly recommended by chefs so I thought it was worth giving a go. I bought mine from Amazon.fr for £17.70 plus a green handle for £12.75.It took a lot of research on which range to buy before I fixed on the Mineral B. The B stands for beeswax, which is the finish applied to the pan after manufacture. I did read somewhere it was organic beeswax. The pan has a bee logo in the centre.I boiled potato peels to remove some wax and any manufacturing residues,gave it a wash and scrub in very hot water. Gave it a light coating of light olive oil, and heated it up very hot on a ceramic induction hob. The base turned black very quickly, the sides less so. I was concerned to see what looked like white stains on the hob and was worried I had damaged it, but after using a slightly abrasive hob cleaner it was fine. I hadn't taken the hob as hot as it could go because I was worried about damage to the hob however the pan seems well seasoned and is working fine. When and if I have to season again I will use the recommended flax oil but Amazon have been slow to send the bottle I ordered and I couldn't wait to get the pan into use.However despite my not very perfect seasoning, the surface is very smooth and slippery, and much better than my old cast iron or Lodge cast iron. The pan is improving each time I use it.So far I have fried eggs, mushrooms, and pork chops. The eggs have caught slightly but I was cooking them quite hot so I could get crispy brown underneath and the catching was very slight. The mushrooms were browned without drying out. The pork chops were nicely browned but still moist, without any significant catching. I have also cooked tomatoes which are meant to damage seasoning but had no noticeable effect.I only have a plastic turner which is not ideal and a good stainless steel flexible turner/spatula should help enormously making sure the tasty brown bits stay on the food rather than getting left on the pan, plus a steel spatula is good for scraping any bits off the pan thus keeping it in tip top condition.I am now torn as to whether to buy the "country pan" as a wok substitute or a Wusthof spatula next. I will definitely be getting more frying pans in this range.LATER I bought both! The country pan is really good.PLEASE NOTE My review was for the pan that does not have a handle, just the little flap where the handle attaches. I purchased a separate handle. The listing has been changed so that my review appears for a pan with a handle. Not as good as it won't fit in the oven.If you search Amazon.fr they are available on there. They are still a very good pan even with a handle but I like pans without detachable handles as they take up less room in storage and fit in the oven easily.

Having gone through two non-stick frying pans over the last 10 years, I decided to buy something a little more long lasting. I looked at some non-stick pans made from titanium, but they were roughly 30-50% more expensive than this De Buyer pan. I also considered the enamelled cast iron frying pans from Le Creuset, however, the cost and the sheer weight of the pans put me off.The De Buyer pan looks great to me. Functional and stylish. The handle is riveted onto the pan and the whole thing feels weight enough to be solid, but without the enormous heft of a cast iron pan. The handle has a smooth coating on it that feels nice, though be aware that it still conducts heat. If you are frying over a high heat,it is advisable to wrap a cloth over the handle or use oven gloves.The pan heats up quickly and is ideal for searing meats. 24cm is a good size when cooking for one or two people. This pan is not non-stick - you must season the pan and use it over time in order to build up a patina. The pan comes with some basic instructions on how to season. The more you cook with it, the darker the surface of the pan gets. This is normal and will help build your non-stick coating.Do not worry about it being unhygienic. Frying will kill anything on the cooking surface, though of course you should still wash the pan. De Buyer recommend purifying the pan occasionally to stop residues and odours from previous uses seeping in. You simply heat the pan over a high heat with cooking salt in the pan, and then wipe clean with a kitchen towel.You can use metal utensils on the surface, but also use your common sense. Hard and abrasive scraping will damage the coating you are trying to build up, and you risk scratching the metal.Cleaning is simple. Wash with hot water, a soft sponge and a tiny amount of washing up liquid. Wipe the pan dry all over, otherwise the pan may rust. Any bits of food that stick can be picked away with a plastic scraper or a slightly rougher sponge. Never use a metal scourer.Before you put it away, pour a little oil onto a kitchen towel and wipe the surface of the pan. Do not put it away without the cooking surface being oiled. Before you use it again, you can rinse it with hot water (and then dry).A few things to note if you are used to using non-stick pans:- the surface of the pan will darken and colour. This is a gradual process and the colouration does not happen evenly. If you like your pans to look beautiful and pristine, then these pans are not for you;- they take more looking after. You cannot use a dishwasher with these pans and you need to dry them thoroughly; and- as stated above, when cooking over a high heat, do not grab the handle without protection.For those that are fine with the maintenance aspect of these pans, I recommend them very highly. They are well made and do an exemplary job.

These pans are the deal of the century. Period. And De Buyer has quietly been making them since 1830, in France, not in Asia or Eastern Europe.De Buyer iron pans are what my grand mother used, and boy was she right. We still have them and we still love them.When teflon coated aluminum junk took the world by storm, De Buyer kept making and selling these pans. Who were the customers ? Restaurants.Beware, they are heavy, and completely indestructible. You'll be amazed by their top notch quality. They will stand 300°C in the oven (don't ever do that with an aluminum pan) or will sit happily on gas. They will amaze you how fast and high they heat on induction. It's the kitchen equivalent of a Ferrari.After proper seasoning and proper usage (NO washing machine, just boil some water in it and wipe with paper), iron is naturally non stick, because there is a very thin layer of carbon.And best of all, because temperature goes higher your food will taste sooo much better. Promised.At this point you may think I am overselling.Now have a look at what people say on amazon.com: search "De Buyer pan" and check by yourself.

If you are shopping for an uncoated pan, chances are you already have a strong understanding that uncoated steel rusts quickly and you have to season the pan to prevent that and even a seasoned pan will still rust if not dried properly especially a newer one with a thinner seasoning layer so make sure your pan is dryed properly before storage. Also rust is not toxic. It's just oxidised iron and is insanely easy to clean so I don't get why people are so fussy about rust.When seasoning, use flaxseed oil for a glassy and dark surface if you are mostly searing and not moving food around much otherwise use any high smoke point oil which produce a less attractive looking coating but is less proneto flaking and much more resistant do day to day abuse using metal spatulas.This pan will probably outlast me. The only minor nitpick I have is the use of rivets instead of welding, but then again it's a pretty rare feature to find on any cookware at this price. It's basically as good as it gets and the mineral b coating does seem to help with seasoning compared to their Carbone Plus range which aren't coated in beeswax.

At the age of eighty, I am sick of the so-say non-stick frying pans of today, like most things sold today, it is hyped up as something it is not: Then when it arrives, you realise it is yet another con, and that you have been caught again. When you are as long in the tooth as I am, you immediately think back to all the things that were used years ago, that gave wonderful service, and lasted a lifetime, so when my dear wife died, I decided that I was sick of these so called non-stick pans, which only lasted a short time before you were actually eating the non-stick coating along with the food.From that point on I went on the hunt for some old fashioned gear, and found it on the net in abundance.so it was just a matter of finding the ones that the professionals use. Up came the name De Buyer which I recognised, as I already own a 20cm De Buyer, so went ahead and made my purchase, First thing I did was to season it using Flax seed oil, and from then on, no complaints at all. So much for modern gear?

A very sturdy pan. From the price point I wasn't expecting this kind of quality. If you know what you're doing you'll be able to exploit its great heat retention capacity to achieve great cooking results. Also don't be afraid to take it to high temperatures. It will hold. In the picture you can see mine after a few thin layers of oil and a couple steaks. Heat applied properly will make it develop its patina. Also ignore the pundits that say not to wash your pans... Unless you enjoy salmonella and other nasty bits.The only downside is the coated handle that can only withstand 10 mins in an oven at 200C according to the manufacturer which kind of defeats the purpose of a carbon steel pan.Edit: Remove the yellow silicone logo and your pan is good to go for as long as you want in the oven.Tried it myself. Handle coating held even where it was contacting the oven walls. Defo 5 star stuff

These carbon steel pans are an absolute game changer for home cooking. Sick and tired of replacing non-stick pans I decided to give this a try.What an absolute joy to cook with. Once you build up a nice seasoning layer the pan actually performs better than traditional non stick pans.Steaks are particularly spectacular. Excellent browning and crust layer, great heat distribution. And you can pop these in the oven to finish off the steak if it's very thick.Vegetables, stir frys, eggs, you name it. I will be replacing most of my cookware with carbon steel. Non stick will still have a place for certain foods which may be unsuitable.Just remember. Do not clean with soap, do not scrub with abrasives.Some hot water whilst the pan is hot on the stove will deglaze the pan just fine. Rinse with hot water and wipe clean with a non soapy sponge.

Fantastic - finally got rid of the teflon pans with are apparently bad for me, and to which food stick to like nothings worth when searing at high temperature.Seasons up well (though this does need to done quite frequently compared to the once with a cast iron pan) - a smear of oil and high heat for 30s is enough.Metal utensils can be used -- but be sensible -- avoid damaging the seasoning layer too much, or food will start to stick.Good attempt at heat distribution (from a ceramic hob with very specific hot spots) and food won't stick if used correctly.Good size for 2 normal people or 1 big eater. Take are with size -- the diameter given is across the top.Very heavy and good heat retention.I think I'd have to try very hard to break it -- there isn't much to go wrong.Definitely recommend.

I have read a lot about seasoning these pans. I immediately washed the pan in very hot water to remove the wax covering. This pan did not fit into my oven so I seasoned it by wiping kitchen paper soaked in rapeseed( canola) oil around the whole pan and then putting it on a ring at medium heat until the oil starts to smoke. I then left it on the ring to completely cool overnight. I repeated this process two more times. Then I cooked. Scrambled eggs, perfect. Gammon steaks,perfect, chilli stir fry, perfect. The only cleaning required was hot water and soft washing up brush. The pans look beautiful when they come out of the brown paper. Seasoning turns the pans brown.If you care about having beautiful pans do not buy these. For me, a pan looks beautiful if it looks like it has produced tasty food.

This product is sooo good. When I was reading the reviews before purchase there were a few bad ones saying everything they cooked stuck to it. Well, experiencing this product for myself, following all the instructions I can quite honestly say it is a dream to use and regret not buying one much sooner in life. It makes anything you cook look so much better somehow. It looks really stytlish too and this one is a great size for all your frying needs. Perfect size for an omelette, and not too heavy to handle. You will find it needs less heat to it than a regular pan and holds the heat better. I have not burnt one thing since using this probably because it does hold the heat better. Would recommend,but be prepared to change the way you do things; the results are worth it.

This is a good quality pan for a very decent price. I bought it only for grilling steaks when BBQ is not possible. The flavour and taste is far superior than cooking of a non stick pan.Took me a while to get the seasoning right, but now it's going strong. If you cook acid food, seasoning will come off so careful with tomato sauce. Cleaning requires a bit of time especially at the beginning. While it cleans easily, it requires to be dried properly and maintained with a drop of oil on high heat to prevent building rust and becoming rancid. After some time of use when seasoning becomes black, this is less of an issue.

Once this pan is pre-treated with oil it cooks everything beautifully. Personally, I am fed up with non-stick pans which all seem to lose their non-stick coating in time. I have bought many in the past and no matter what you pay they don't seem to last, but pans like this one (French made and they seem to know what they're doing when it comes to cooking!!) are virtually impossible to damage and therefore last forever I suppose!I cook on an induction hob so there is no excessive heat or flames licking round the pan. This means they are looked after better. Try it and see for yourselves!

Beautiful, well made, will last a life time and recyclable. After seasoning and being treated carefully for a few weeks it now has a lovely non-stick patina, and tricky things like omelettes and fried eggs just slip out. Why doesn't everyone use these? All those years of rubbish (and possibly carcinogenic) nonstick pans that last 6 months if your lucky and then get chucked in the landfill - what a waste. Follow the care instructions and this will be the best kitchen buy you will ever make (apart from Global knifes - which are equally good!)

I bought one of these locally. I have not had this brand before, but I have a steel pan (very similar) that I have had for years - and it's still one of my favourites. Use it, re-season sometimes and it is as non-stick as a 'non-stick' pan! de Buyer include a useful booklet and if you look on their website there are a couple of A4 pages of Questions & Answers. Just follow what they say about first seasoning and about washing and deglazing and it should work as well as my first pan.

This is a lovely sized pan, a good size for say 8 regular sausages, a decent omelette for two or a couple of reasonable steaks. I add this as sausage capacity is a more useful gauge of size to me than pan diameter in inches or centimetres! Sturdy, honest construction with a really nice weight to it, and these pans (if used correctly) will last and last. I have wanted a De Buyer pan for ages and am not disappointed.
