I am a recent convert to these pans and my goodness, they are GOOD.Seasoning instructions come with the pan and are simple. You do have to season the pan when it first arrives - instructions are included, and it is a simple task. You also have to clean the pan the minute you've finished cooking with it (run it under hot water, then rub oil on it with a paper towel). But this takes ten seconds to do. Those are the only down-sides.What you get out of it is a completely non-stick pan, with none of the toxicity issues of both teflon AND the modern "ceramic" pan coatings.The first thing I cooked in mine was a frittata - a kind of omelette - on the basis that if anything was going to stick or burn,egg was the most likely. Not a single molecule stuck to the pan. The iron heats fast and evenly and holds its heat beautifully. The pan works on the stove and in the oven, and you will want to use a pot-holder on the handle, as it does get hot if the pan is in use for more than a few minutes, but it is joy to cook with.I liked it so much, I have immediately bought the 30cm crepe pan, as well.

I LOVE LOVE LOVE my pans. I've had the 20cm and a larger one (I think 28cm?) for about 4 months now. They were a treat to myself for my birthday, as I decided I didn't want to risk the toxicity of teflon, was tired of scrubbing stainless steel that sticks all the time, and needed something decent for cooking. Yes, they DO need to be seasoned, and looked after well. It's best to rinse them straight after cooking, then stick them back on the hot/warm burner, make sure they're totally dry, and wipe a tiny bit of oil over them with a paper towel. This way, they're constantly seasoned, won't rust, and are really nonstick. If you're willing to have this awareness (you get used to it quickly),then they are FAB. I love the way they feel, the way they cook food, and the natural materials they are made from puts my mind at ease. Even on the one or two occasions when they haven't been rinsed & treated right away, it was really easy to clean & re-season them after. I highly recommend these to anyone who's serious about cooking, and especially healthy cooking.

Once seasoned, these pans are simply fantastic. Even scrambled eggs leave no more residue than in a non stick pan. They do need a little TLC. I have time, these days, to give it and to enjoy doing so. Be aware that you do have to season them, which is time consuming but not arduous. After that, just use the pan. If something sticks, wipe it out if it will come out. Boil a little water in it and scrape it gently, if not. I can now put in hot water and a little washing up liquid, give it a quick rub clean, put it back on the hob to dry and then oil it lightly. Olive oil is as good as anything I have tried, for seasoning it. I have seen that Americans use Crisco, which equates to Trex here.I have tried that and it is possibly easier to get the pan black quickly, than with oil. The surface seems no better and no worse. I do not like the smell of Trex and have gone back to olive oil, which at least smells like normal cooking!

This is an amazing pan that seasons well. However it is smaller than you might think (I know measurements are on the description) but in real terms the pan will only fry one large egg at a time. That said it's an omelette pan an it the perfect side for that. Personally I should have bought a bigger size but then now I have an excuse to buy another one. You will be filled with joy when you first unpack and touch this pan it's lush!

I am very impressed with this pan, and found it a snap to season using flaxseed oil, in multiple coats, using the top burner rather than the oven as suggested in this excellent website: [...]I had previously purchased a De Buyer Blue Steel pan and found it impossible to properly season, and would never recommend it. The Mineral B is a far superior product, and half a millimetre thicker as well.

I was concerned about using a not non stick pan for eggs but having brutally prepped this with high heat and oil and a good wipe it works like a dream. Very please indeed and will never consider using a non stick again. Expensive but I suspect my great grandchildren will use this one day as its heavy and built to withstand a small nuclear blast. Brilliant

I bought these for guest to use but I have kept them as guest's do not know how to treat them (I tried explaining but no joy). Once you have conditioned them they are so easy to clean, just hot water and wipe with kitchen towel and oil again, all of 2 minutes if that. I have 7 of these type and they are bullet proof.

Great pan, works as the De Buyer instructions say, start off with meats and it will become increasingly non stick, is now my egg frying pan.The only part of the instructions I'd change, if you've an electric hob like me, season it in the oven rather than on the hob, which only seasons the bottom of the pan.

Love these De Buyers - an investment, but will last.Superb pan.Got it seasoned nicely, and omelettes are lovely and fluffy.I use less fat in cooking too - seasoning results in a properly non-stick pan, which is dead easy to clean.Why, oh why did I bother for non-stick aluninium pans for so long?

This is pantastic! Seriously it is a real french solid pan just right for an omlette or 2fried eggs. Yes, you can’t put it in a dishwasher and you have to wipe it, but that’s what real cooking is like

It costs double what you would pay for a non stick pan, but you are not eating Teflon and it will last you a lifetime, so really it's cheaper on your wallet and body.

I own a couple of the de Buyer pans and the are excellent. One note of caution however: the diameter of the pan is measured around the top rim not the base.

Really nice pan. It works really well on an induction hob. The only drawback are the screw heads showing in the bowl of the pan which are a fiddle to clean.

As for all their kitchen products, de Buyer cooking kit hammers home the fact that the UK cannot produce a decent heavy metal cooking implement

Along with other pans by De Buyer I own, this is the pan I ever have had, this I feel will last for many years!
