Very sturdy construction. Built to last a lifetime. This is my 3rd De Buyer pan and probably my favourite.I have just finished seasoning it, and the pan now has a deep, even brown colour.For anyone interested - this is the only way I would recommend seasoning De Buyer/similar carbon steel pans. Don't follow De Buyer's own instructions involving salt/potato skins as it leaves an uneven, gunky mess.1) Wash off the factory coating (in this case, beeswax) with boiling hot water and a green scouring pad. Rub vigorously.2) Dry thoroughly with a towel2) Put a tiny drop of oil in the centre of the cooking surface and with a piece of kitchen paper, wipe it evenly over all surfaces of the pan - both inside and out,including the base. One tiny drop of oil should be sufficient, but if you run dry, add another drop. In a well lit kitchen you should be able to see any missed spots. Retain the oily bit of paper for the next round of seasoning.3) Take a fresh sheet of kitchen paper and wipe off ALL the oil you just applied. All of it. Remove all visible streaks/smears of oil, until it looks like its clean - however it will have a very thin coating which will evenly polymerize. This is the most important step to get right.4) Place the pan on the hob and heat until there are no more visible wisps of smoke (put your extractor fan on!). On my old fashioned electric coil hob this takes about 4-6 minutes on the highest heat.5) Leave to cool completely.Repeat this process a further 10 to 15 times. It will take time so be patient and this initial investment in time and effort will pay off in future. The steel will now have a brown, shiny appearance and in some areas look unevenly coloured or even blotchy - but it will feel evenly smooth to the touch. The end result is a distinctly darkened pan with an even coat of polymerized oil. The first time you cook on it, you may not be impressed with the non-stick qualities. Only clean it with hot water, no soap or scourers. I used a wooden spatula to remove mess, with a little fine salt if an abrasive is needed. Over the next handful of uses the pan will further darken and will then become truly non-stick after a short time.After washing, wipe and dry it out on the hob for a minute. Give it a little dab of oil and wipe all over. Store it this way and it won't rust.If you try to hasten the seasoning process by using more oil you'll only end up with a streaky, sticky mess.People get very attached to their De Buyer pans and after using mine for a year, I now get it.

These pans are the deal of the century. Period. And De Buyer has quietly been making them since 1830, in France, not in Asia or Eastern Europe.De Buyer iron pans are what my grand mother used, and boy was she right. We still have them and we still love them.When teflon coated aluminum junk took the world by storm, De Buyer kept making and selling these pans. Who were the customers ? Restaurants.Beware, they are heavy, and completely indestructible. You'll be amazed by their top notch quality. They will stand 300°C in the oven (don't ever do that with an aluminum pan) or will sit happily on gas. They will amaze you how fast and high they heat on induction. It's the kitchen equivalent of a Ferrari.After proper seasoning and proper usage (NO washing machine, just boil some water in it and wipe with paper), iron is naturally non stick, because there is a very thin layer of carbon.And best of all, because temperature goes higher your food will taste sooo much better. The 24 inch is an execellent size. The base of the pan will fit two eggs, four hash browns or two potato waffles. Once the pan is well seasoned it is excellent for making a curry for two or perhaps more people. It makes excellent egg fried rice, pancakes and pop corn (though for popcorn you will need to find a lid or a metal tray). Pancakes in particular have a lovely texture to them.I would suggest using wooden spatula for this pan (especially stir frys), as it will not scratch any seasoning you have built up while at the same time will allow you to scrape any areas that food sticks to during cooking. In general though,a well seasoned carbon steel pan will be effectively as non-stick as a teflon pan while at the same time being much more durable.I have managed to warp my pan slightly by following pan seasoning instructions found on youtube and using very high heat (though this is almost imperceptible and the pan still performs brilliantly on a gas hob and an AGA). I still give it five stars though because it is my absolute favorite and most used pan.

I bought two of these as gifts for my kids, because I already own one. If you do get one, it should be the last saute pan you will ever need. It is not a teflon pan! It does not work like a teflon pan - even with months of proper care. But, and it is a big but, you can do anything, with anything to anything, and it bounces back, over and over. I rinse in hot water only, scrub if necessary and finish with a thin coating of oil, heated on the hob. If you do this, it will outlive you. (I also have a De Buyer egg pan set aside for fried eggs. They never stick!) It is heavy enough to work well on an electric or induction hob.The choice is between forking out for a "non-stick" pan every year,or getting this.

If you're serious about your cooking, these are the best pans you can get and this shape is particularly useful (I have this one and a huge one - about 15" diameter). You can heat them very hot over a flame or in the oven, and (properly maintained) they will soon become virtually non-stick and last a lifetime. They take a while to reach black, well-used perfection, but the maintenance routine (clean in hot water, without scouring, then dry over a flame and rub a couple of drops of oil into the surface) becomes automatic and almost a pleasure. It's best to avoid acid ingredients like tomatoes and lemons, but for frying or sauteing meat or veg these are unsurpassed. They are also quite heavy.

I love this Pan. Wish I could afford to order whole range. I will in time!. It's the healthiest way to cook. Taste good. And after only a few times of oiling it, has become naturally non stick. If anything does become stuck at the bottom , a few minutes of very hot water soaked in the bottom , everything comes off with a wipe. Then I smear oil all around inside of the pan again. The best pan I have Ever used. I cannot recommend enough

I have a few of these pans now, they are great.No Teflon, which I find loses its non stick qualities after a fairly short while.Plus apparently Teflon has carcinogenic properties.Just keep Carbon steel pans seasoned, and they stay non stick.These pans are heavy, not as heavy as cast iron, but my wife can't use them.If the weight might be an issue for you, look at the Salter "pan for life " range, which come preseasoned.

I have been a chef for 50 years and have always used de buyer in all my kitchens. I have never, ever had reason to complain. They have been incredible, retain the heat, become non-stick with use. I still use them in my home kitchen now I have retired. I cannot for the life of me comprehend how one reviewer managed to warp his pan. ,

I love this pan - size wise it is perfect for two fried eggs on the base but because of the well sides it works like a pot, used it to make bolognese sauce today for two and it was ideal. Converted to De Buyer and will buy more.

already owned an old frying pan which is very well seasoned and do not stick. this new one is as good as the first one and both my husband and I are delighted with it. it is also very versatile. Should last a life time

High quality French-made cookware. Heavy, robust and just a good old-fashioned sturdy pan. Take a while to get well-seasoned as all good quality iron pots do but well worth the effort. Used daily in our household.

I love all the Mineral B De Buyer pans and this one is no exception! Keep it seasoned well and it will remain non stick, best oil I have found for this job is rice bran oil.

i love this pan but i wish it were 2-3cm more in diameter on the actual cooking surface so that i could cook bigger steaks with it!!

A quality item. It must be correctly seasoned before proper use. The more I use it the better it gets and the more I like it.
