Over time I have found myself using it a lot. It is a shame that I could not give it 5 stars because I am huge fan of copperware.It is a bit shallow but I like it overall. The diameter is good, marginally wider than the 28cm Falk wok. The Bourgeat 28cm wok is also an option. But this Mauviel is not a deep wok. With regard to shape, the Falk is a far better pan. The depth is rather shallow and the bottom is flattened out. No one offers the rounded bottom in the copper range. This is a shame. The traditional rounded bottom has many advantages such as concentrating heat (like a lens) and managing the deep-fry process with very little oil, in addition to making it easy to toss.The flattened bottom is an unfortunate compromise to make it modern hob friendly. The other reason it only gets a 4 star, is because the finish on the handle is terrible. The edges on the long brass handle are so sharp that it could cut into your flesh if you handle it without being aware of this. I do not know why they would let something so obvious slip quality control or its design team. It also makes it extremely uncomfortable and dangerous to toss food in the pan while stir frying.Since not many manufacturers offer a copper wok, this Mauviel is an excellent addition. It is an excellent buy despite the appallingly bad handle!! The sharp edged handle is easily buffed down with a file or an angle grinder. Then this wok becomes a super duper wok.

There's a world of difference between cooking on copper and anything else. If you like to keep the temperature down this is a great wok. The handle lets it down somewhat though, too narrow for a comfortable grip with my carpenter's hands but perhaps I'll get around to sticking a piece of burr Walnut on there some day! Could also do with a glass lid but managed to find one elsewhere, which I reversed the handle on so it sits upside-down letting the moisture drip back into the centre. The price varies so keep an eye out. Easy to bring a lustre back with a mix of lemon juice and salt (I keep a bottle by the sink) but use the Mauviel paste for a higher shine, it works really well.

This wok was my first wok and I'm happy that I made the right choice.The Mauviel copper pan has much ticker copper than those I see in regular stores.For this particular wok, it is a bit small and shallow, not ideal for Chinese cuisine.Even though, I used it to cook almost anything at the time because this was the only one.
