Mauviel 28cm Copper Saute With LidMauviel have been hand producing cookware in France since 1830, and along with a diminishing handful of similar artisans still make cookware to a weight and quality unseen elsewhere. Contrast these beautifully made, solid, weighty pans with the mass produced offerings from Tefal and the other usual suspects and you soon realise why Mauviel pans are genuinely desired by professional chefs and foodies across the world. If I could liken an aluminium Tefal to a Ford Fiesta, a Mauviel would be a Rolls Royce. Beautiful to look at, fantastically well made and rather heavy. In short, a pan that says you are a serious player!Copper pans themselves go back generations.In the old days they were tinned but nowadays - as here - they tend to be stainless steel lined. Tinning had the disadvantage that the coating wore off after a while so the pan had to be re-dipped. The stainless steel is permanent and maintenance free.I have used stainless pans for the last 15 years and can honestly say that they beat a "non stick" or "teflon" coated pan every time. However well you treat a non stick pan the coating, which is basically a plastic, will always wear off. The result - a disposable pan. Instead, a stainless pan used correctly will not cause food to stick to it anyway and will last a lifetime. These Mauviels will last several lifetimes!The great thing about copper is its very high thermal conduction. An even and rapid spread of heat across a pan is highly desirable and at 2.5mm the outer copper layer is unusually thick. There are now a few Far Eastern look-alike cheaper copper pans on the market from Stellar and others, but they simply place a wafer thin cosmetic layer of copper on the outside which does little and will soon wear away. My advice is stick to the original - you get what you pay for!Lastly, a few technical details. The Amazon listing says the pan weighs 1kg but they are incorrect. This, the largest saute (it's big!) tips the scales at 4.8kg! I love the solidity and the sheer thermal mass of it is superb for cooking with. I have no trouble using it, and there's no need to fling a pan around madly, but if you are weakling or prefer cookware acrobatics this pan may cramp your style! The handle is a single solid chunk of cast iron - the traditional cool handle! It radiates heat away and remains cool enough to pick up. Being metal it also allows you to pop the pan in the oven should you desire.This largest of saute pans is pretty big, and that's what I love about it. It will hold a gallon of fluid with half an inch to spare. The sheer size also makes it ideal for cooking entire meals in. I like to throw in a shoulder of lamb to brown, add some onions and seasoning, and then add lots of rough chopped fresh vegeatables. Simmered gently for a couple of hours the result is a super-tasty, hearty and inexpensive meal for six. This is exactly the style of cooking for which these pans evolved.In summary, I cannot praise these pans highly enough. Not only are they the very best pans to cook with, but they are sheer works of art. The terms "mass production" and "planned obsolescence" do not apply! I truly wish more of our lives could encompass such craftsmanship and values. I am alarmed that Amazon seem to be cutting down on their Mauviel copper range. Perhaps if more of us purchased they might reverse this unfortunate decision. Mauviel make a full and comprehensive suite of pans, roasters, bain marie, fish kettles, sautes and more. Wake up Amazon!Buy one and I confidently predict that you, like me, will not wish to shut it away in a cupboard - they look too nice. They may be expensive, but your children and their childrens children will thank you. I have already started my collection. My wish list sorted for the next decade I think!

This pan could not be easier to clean. Even if I do get food stuck in the middle of the pan the steel interior will make sure that if I soak it for a little bit I can scrape it right off with a wooden spoon. Easy clean every time. The copper outside means that, as soon as I take it off the heat, the temperature in the pan drops immediately making burning food less likely anyway. This product is a you get what you pay for in the positive sense.

purchased the 24cm saute pan with lid for £200 due to my local shop wrong pricing,but found that i needed the 28cm 4.6ltr cooking space and boy is this a big sauté pan it cooks full meals with room to spare, purchased this from amazons warehouse deals,but be aware this pan is very heavy great quality and worth every penny buy with a smile ..

I am told it's being used on a daily basis and threats have been issued if anyone who mistreats it.Be aware it is heavy (thats the point after all). The handle is massive and needs to be.I suspect that over the next few Christmases the rest of the range will be acquired.

Quality, cooking is very easy, even heat but need to keep up the gym training to lift it
