This is a great pan, at a reasonable price considering it is tri-clad stainless steel (it has an encapsulated aluminium layer - this is not to reduce costs but to increase conductivity and responsiveness when cooking). I was initially hesitant to make the purchase due to some so-so reviews, particularly regarding durability and handle design - but in my experience neither have been an issue. I clean mine regularly with a metal scourer and the finish is still virtually unmarked. One of the advantages of an SS pan is that you can use metal utensils and abrasive cleaning tools, a welcome relief after using teflon-coated cookware. I saw a video of a guy cooking with one of these pans so I thought I would try one. The pan looks good and cooking in a metal pan feels kind of good too. After using it a couple of times I watched some videos of how to clean stainless steel pans! Being used to using non stick pans this stainless pan is definitely not non stick. If you lubricate it carefully you can get away with doing an omelette, but I tried doing hash browns! Not so good. Cooking a steak left hard to remove staining on the pan. I have managed to get the pan back to a new looking finish but I have a feeling it may turn into a cleaning exercise. These pans are most likely aimed at the professional kitchen.

Now that I've used it for a while, it really is a lovely pan. It cooks omelettes beautifully, but firstly you need to understand the temperatures, heat the butter to the correct heating temperature, do not burn the butter. If you do burn the pan because you used olive oil which burns if too hot, the pan cleans to a brilliant sparkle with Brillo, after a soak in warm soapy water. If your food sticks, you did not allow the pan to get hot enough before cooking.

Being impressed with my first purchase of a 24cm Mauviel chefs pan with lid, I had no hesitation with a follow up purchase of their 24cm frying pan (mainly to utilise the lid I purchased with the chefs pan). Stunning quality, cooks evenly and the handle is comfortable to hold. Highly recommended.

Hats off to the bright spark who fixed a large oval label on the surface of the pan.It only took two hours to get the adhesive off and the pan clean enough for seasoning.

Good price. Saved 40% 2.6mm thick. Pan as described. A helper handle would be better if fitted to the larger pans.
