Recently, I had dinner at L'Agrume, one of these down-to-earth and yet fabulous restaurants that turn Paris into a culinary wonderland. I went there with a Parisian friend who knew the place and we sat at a bar-table overlooking the ca. 2x2m kitchen where the cook single-handedly cooked for the 25 guests or so. He played his Mandolin, producing rice-paper thin slices of pears that he piled high on a slice of gorgonzola together with ruccola.When cooking, cutting the food is one of the key elements of success - in cooking, texture is equally important to taste and cutting is an essential in getting the texture right.For a long time I had had in mind to buy a mandolin and having seen the masterly chef in action I looked around in a Parisian shop for the mandolin that my knowledgeable friend had told me was Japanese. When they didn't have it I thought I certainly wasn't going to waste my precious time in Paris looking for a gadget that I no doubt would find on Amazon. And indeed I did so now I'm the happy owner of a professional Japanese mandolin.When I showed it to my family the smiled; the mandolin looks like one of these things one buys because some salesman is good at his job. But as we sat down for dinner the smiles melted into sighs of wonder and amazement. A salad with the thinnest slices of grapes (yes, indeed) with a good mustard vinaigraitte is a new experience. Thin slices of slightly under-ripe pears with Stilton/Stichelton, Gorgonzola or fois gras adds a hint of sweetness and crispy texture that is the perfect touch. Thin slices of fennel with a touch of oil and sherry vinegar with slices of pink grape fruit is perfect with a tuna tatar. Slices of raw sellery add crunch and bite to duck fillets in a sauce of soya, oil, lime and tamarind as I cooked it just before writing this review.For those of you who want to add a new dimension to your cooking - be it taste, texture, colours or all of this - you can get far with the Japanese mandolin. In Swedish they say that when you eat good food you can hear the angles sing. They will sing heavenly when the cook plays his Japanese mandolin...

Being a vegan this tool takes the hard work out of food preparation. I have used it for a week and as far as I concerned it is love at first use. The packaging has all the information in Japanese and English with pictures and photos of samples. I would say that it is foolproof.What you should know is that it only cuts hard vegetables. When I tried to slice my not-so-hard tomatoes it didn't end up well. Next day I tried to slice my new batch of tomatoes that was hard and the result was very nice.

I bought it as a replacement of the mandoline we had before (Same one but 9 years old...).It's still just as good, can slice and grate almost everything. Very easy to use and clean.One word of caution: use some glove to protect your finger. It's very easy to cut yourself even when using the guard

Lovely mandoline, works well, my only complaint, is that you can't adjust the thickness much; its barely noticeable. I must prefered the old style with screws that you screwed up and down depending on the thickness of slice desired.So if you want waifer thin all the time, this is great!

A well made item it is a geniune Japanese product the small footprint is a bonus as it can be stored in original box that up very little room.Very sharp blades are easy to change as it does not state dishwasher proof best to hand wash.

Just what I ordered and does what it is supposed to do. Delivered quickly and of good quality.Please mind your fingers if like me you are new to a Mandoline It will be very unforgiving if digits get to the blade instead of carrot.

does what it says on the tin. looks exactly like it does on the photo. Its easy to use and has usefull thickness variants and 2 different blades. the handguard works well too and allows for most of the veg to get chopped.

There were no clear instructions as to how to use it. It referred to various blades for slicing etc., but it's not that easy to figure out how to use it for thicker slicing. However it is a nice item.

Very easy to use and it produces pretty julienne of vegetables. Have been warned and so I've been very careful about keeping my fingers safe! So far no accident. Very pleased with the purchase.

This is fine - wide enough to do most veg, super sharp, lightweight, not flimsy. It also took off a large part of my finger - though it does come with a useful guard.

Bought to replace one that after fifteen years or so was showing signs of wear. Can't be beat for quickly producing thin slices or shreds of vegetables and fruit.

Like the title says, be careful not to slice your fingers (a la my other half) but it's an immense timesaver!Cleaning it could be easier though.

Performs very well overall, produces even results quickly. Blades are easy to change and adjust. The compact size means that it is easy to store.

I wish it had a deeper setting for the blades. It cuts so finely I can trace through the slices, which if that's what you want great.
